#toastytuesday – Lobster & Avocado BLT Toast

A spin off our beloved Lobster BLT served in our Cafe, this week’s #toastytuesday is taking us back to summer days. Try either the Basil Pesto Aioli or our new Farmhouse Mayo – they are equally delicious.

Lobster & Avocado BLT Toast

Ingredients:

  • 1 slice bread, toasted (try Brioche – just like in our Cafe!)
  • 1 Tablespoon Stonewall Kitchen Basil Pesto Aioli or Farmhouse Mayo
  • 2 ounces great-quality thick-sliced bacon (about 2 slices), cooked
  • Fresh arugula
  • 2 small tomatoes, sliced
  • 1/2 ripe avocado, sliced
  • 1 ounce cooked fresh Maine lobster meat

Directions:

  1. Spread Basil Pesto Aioli or Farmhouse Mayo on toast.
  2. Layer bacon, arugula, tomatoes, avocado and lobster.
